Recommendation for DNS host, want to keep current domain registrar

Google Domains subdomain with separate MX/SPF/DKIM records?

On my old DNS provider this was simple. If I owned example.com, I could easily create mail.example.com as a subdomain and setup unique MX / SPF / DKIM records for the subdomain.
